     Follower of wines that do not fit into the codes of so-called traditional winemaking, this range, made up of 4 wines that will expand over the years, is perfect for you.

These are wines without added sulphites, atypical, extravagant. Sulfite-free wine does not exist, but natural wine without added sulfites does! Sulphite is naturally present in the fermentation of grapes, but at an extremely low level, well below the human sensitivity threshold. The winemaker does not intervene but accompanies him!

Fermentation stops naturally, like a flower that opens to release a sweet fragrance, which we want to keep. We try to apply this same mastery with our wines, through a light filtration before bottling, so that the aromas/spirit of the wine does not fade or become distorted.

The labels remain the same: simple and uncluttered.



"Naturae"

Riesling

Riesling is an easy variety to work with in the cellar, as it becomes a dry wine, making the vinification process more straight-forward. It expresses itself as much on the land where it was planted as it does during the vinification process.


This Riesling has gone back to its natural vinification method, as it was done by the great-grandfather of the family. 

"L'inclassable" -The unclassifiable

Gewurztraminer

This is a wine that cannot be classified in the classic Gewurztraminer family, dry with an orange hue.


Hence its name! It is one of the most constraining vintages to vinify, as one must preserve the primary and secondary aromas, flowery and fruity. 

"L'oubliée" - the forgotten

Pinot Gris

This is one of the first wines that David was able to oversee from A to Z without his father’s (Thierry) intervention.


During the making of that vintage, Thierry would often say “David forgets the vinification process”, which gave the wine its name. 

"Haima"

Pinot Noir

« Haïma » means blood in ancient Greek, referring to the sap flowing through the vine, which allows the vine to feed and produce its ruby-colored grapes.


The vinification of Pinot Noir without sulfites is easy enough to achieve.  

Pétillant naturel – Naturally bubbly (Pet’nat’)

   It is a naturally sparkling wine. The grapes are grown in the respect of a biodynamic agriculture. Nothing is added, no sulfites of any kind: just as we do for the natural wine. We often say that our Pet’Nat’ is elaborated following an age-old recipe, which consists in bottling a partially fermented wine, so that the rest of the fermentation takes place within the bottle. The sugar content in Pet’Nat’ is simply the residual sugar of the grapes, which wasn’t consumed by the natural yeast during fermentation.

Here we honor the subtle blend of gewurztraminer for its fruity taste and Sylvaner, which is drier.
